Healthy Diet Soups

These healthy diet soups are lip smacking and will have you asking for more.  They may form a part of a healthy weight loss diet plan and are ideal for anyone.

White Onion Soup

Preparation time: 00: 10 Cooking time: 00: 25

Ingredients 

12 small white onions

2 Tbsp olive oil

1/4 Tsp brown sugar

1 1/2 pint beef stock (or chicken stock)

1 ounce brandy

4 slices french bread (toasted)

1 Tbsp grated swiss cheese (or other healthy alternative)

1/4 Tsp black pepper

Pinch of salt

Preparation

Wash, peel and slice onions thinly

Heat oil in a sauce pan and add sugar

Add onion slices and sauté with low heat

Stir constantly until onion slices are golden brown

Add beef stock (or chicken stock), salt, pepper and stir

Cover pot and let simmer for 15 - 20 minutes (or until desired consistency)

Add brandy just before serving

Scoop soup with onion in bowls 

Sprinkle grated cheese on top

Serve with toasted french bread and enjoy this healthy diet treat.


Tomato Celery Soup

Preparation time: 00: 10 Cooking time: 00: 30

Ingredients

4 cups tomatoes

2 cups vegetable broth

2 stalks celery 

1 medium onion

1 Tsp whole flour

2 Tbsp olive oil

1 bay leaf

Pinch of salt

Preparation

Wash and chop tomatoes, celery, onion

Put vegetable stock in soup pot with chopped vegetables

Add bay leaf to pot

Cook for 15 minutes or until vegetables are tender

Remove vegetables from pot and push through a sieve

Put mashed vegetables back in soup pot and stir

Mix flour with 2 Tbsp water and add to pot stirring continuously to avoid lumps

Add salt, olive oil and stir

Simmer for 5 - 8 minutes

Serve this healthy diet soup hot or warm to please those taste buds.


Tomato Bean Soup

Preparation time: 00: 10 Cooking time: 00: 30

Ingredients

2 cups red beans (canned or cooked)

2 cups tomatoes (canned or cooked)

1 cup rice (cooked)

1 cup coconut milk

2 cups boiling water

Pinch of salt

Preparation

Mash beans and tomatoes

Push mashed beans and tomatoes through a sieve for a smoother texture

Add water, milk, rice and salt

Stir mixture

Simmer for 10 - 15 minutes stirring a few times

(Adjust water to make soup a medium thin consistency, or to your desired taste)

Serves 6 hot healthy diet bowls


Tomato Okra Soup

Preparation time: 00: 10 Cooking time: 00: 30

Ingredients

2 cups tomato (diced)

1/4 cup rice (cooked)

4 cups water

2 stalks celery

1/2 green pepper

2 Tbsp olive oil

3 Tsp onion (chopped)

2 cups okra (sliced)

3 sprigs parsley (or 2 Tsp freshly chopped)

Pinch of salt

Preparation

Put rice in frying pan and bring to a light golden brown color

Add water and bring to a boil

Wash and chop tomato, celery, onion and pepper

Put oil in a sauce pan

Sauté onion, celery and pepper

Cover sauce pan and simmer for 3 - 5 minutes

Add tomatoes and stir together

Pour into rice pot (adjust with water to desired consistency)

Add salt to taste and stir

Cook until rice is tender

Add okra and stir together

Cook until well done

Garnish with parsley

Serve hot and savor those taste buds with this healthy diet soup.


Spinach Soup With Coconut Milk

Preparation time: 00: 15 Cooking time: 00: 35

Ingredients

2 bunches spinach

1 large irish potato

1 large onion

4 cups vegetable stock

1 cup coconut milk

2 Tbsp olive oil

1 Tsp whole flour

Pinch of salt

Preparation

Wash, peel and chop potato and onion

Wash spinach thoroughly, drain and chop finely

Put vegetable stock in soup pot 

Add potato and onion and boil until tender

Remove potato and onion from pot and mash until smooth

(You may push these through a sieve for a smoother texture)

Steam spinach lightly over medium heat 

(Do not overcook; spinach should still have that bright green color)

Return mashed potato to pot

Add spinach and oil

Mix flour with 2 Tbsp water and add to soup pot stirring consistently to avoid lumps

Add milk and stir

Simmer for 5 - 8 minutes

Serve hot and delight yourself with this healthy diet soup.


Watercress Soup

Preparation time: 00: 15 Cooking time: 00: 30

Ingredients

1 bunch watercress

1 large irish potato

1 large onion

3 cups vegetable stock

1 cup coconut milk

2 Tbsp olive oil

1 Tsp whole flour

Pinch of salt

Preparation

Wash, peel and chop potato and onion

Trim stalks and wash watercress thoroughly, drain and chop finely

Put vegetable stock in soup pot 

Add potato and onion and boil until tender

Remove potato and onion from pot and mash until smooth

(You may push these through a sieve for a smoother texture)

Steam watercress lightly over medium heat 

(Do not overcook; watercress should still have that bright green color)

Return mashed potato to pot

Add watercress and oil

Mix flour with 2 Tbsp water and add to soup pot stirring consistently to avoid lumps

Add milk and stir

Simmer for 5 - 8 minutes

Serve hot and enjoy.
